Ingredients
  

  • 5-6 small pickling cucumbers (or 2-3 English cucumbers)
  • 1/2 medium Vidalia or other sweet onion
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 tsp sugar
  • 1 tsp salt
  • 1 clove garlic, minced
  • black pepper, to taste

Instructions
 

  • Peel the cucumbers and slice to your liking. Peel and slice onion. Combine in a large bowl.
  • Combine vinegar, water, sugar, salt, and garlic and pour over cucumbers and onions.
  • Allow to sit at least an hour before serving. Sprinkle with black pepper (optional).

Notes

For best flavor, allow the salad to chill in the fridge for at least an hour before serving. Adjust sugar and vinegar to taste. Keeps well in the refrigerator for 2-3 days.
