Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1/2 cup chicken broth (low sodium)
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp cornstarch (optional, for thickening)
  • 1 tsp water (optional, for slurry)
  • to taste salt and black pepper
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Lightly grease the slow cooker with nonstick spray or oil.
  • Whisk together chicken broth, sun-dried tomatoes, garlic, oregano, thyme, and red pepper flakes in the slow cooker.
  • Add chicken to the slow cooker and season lightly with salt and pepper.
  • Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken reaches 165°F and is tender.
  • Stir in heavy cream and parmesan cheese. For thicker sauce, mix cornstarch with water and stir in. Cook on HIGH for 30 minutes.
  • Garnish with fresh basil and serve over pasta, mashed potatoes, or with crusty bread.

Notes

Add the cream and parmesan at the end to keep the sauce smooth and prevent separation. Chicken thighs are more forgiving, but breasts work well when cooked gently.
